Blond Brownies

When you want a cookie but don’t want all the fuss, this is my go-to dessert. I love a quick sheet of goodies. One pot to prepare, and ready in under an hour from start to finish.
The first time I had these was the very first day I met my future in-laws, having driven their car back to their house from Corvallis, the one my husband borrowed for a few months before buying his first car. Ginny, my late mother-in-law, had a warm pan of blond brownies cooling on the countertop. Nearly every visit after that first encounter there was a pan of blond brownies awaiting us. They are irresistible.
Blond Brownies
Ingredients
- 3/4 cup salted butter, melted
- 2 1/3 cup light brown sugar
- 2 eggs
- 2 teaspoons vanilla
- 2 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 8 ounces dark chocolate chips
Instructions
- Preheat oven to 350.
- In a medium saucepan, melt butter and add brown sugar. Let cool to tepid. Mix in beaten eggs and vanilla.
- Combine dry ingredients and fold into the wet batter until just fully combined.
- Spread evenly into a greased and floured 9×13 pan and spread enough chocolate chips to nearly coat the top. As far as I’m concerned, the more the merrier.
- Bake for 26-30 minutes.
