Blond Brownies

When you want a cookie but don’t want all the fuss, this is my go-to dessert. I love a quick sheet of goodies. One pot to prepare, and ready in under an hour from start to finish.

The first time I had these was the very first day I met my future in-laws, having driven their car back to their house from Corvallis, the one my husband borrowed for a few months before buying his first car. Ginny, my late mother-in-law, had a warm pan of blond brownies cooling on the countertop. Nearly every visit after that first encounter there was a pan of blond brownies awaiting us. They are irresistible.

Ingredients

  • 3/4 cup salted butter, melted
  • 2 1/3 cup light brown sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 ounces dark chocolate chips

Instructions

  1. Preheat oven to 350.
  2. In a medium saucepan, melt butter and add brown sugar. Let cool to tepid. Mix in beaten eggs and vanilla.
  3. Combine dry ingredients and fold into the wet batter until just fully combined.
  4. Spread evenly into a greased and floured 9×13 pan and spread enough chocolate chips to nearly coat the top. As far as I’m concerned, the more the merrier.
  5. Bake for 26-30 minutes.
